LOMO SALTADO 
1 lb. tenderloin or cooked beef
2 lg. onions, cut in strips
2 tomatoes, peeled & cut in lg. pieces
1 hot pepper, cleaned & cut in strips
1 tbsp. chopped parsley
Salt & pepper to taste
1 lb. French fried potatoes

Cut meat in small strips and brown in oil. Add remaining ingredients (except potatoes) and cook until tender. Mix with the French fried potatoes and serve. Usually served with plain rice.
