OLD FASHIONED TOMATO SOUP | |
1 qt. canned tomatoes 1/2 onion, cut up 1 bay leaf 4 whole allspice 3 sprigs parsley 1/4 tsp. pepper 1 tsp. salt 1 tsp. sugar 3 tbsp. butter 3 tbsp. flour 1 c. milk 1/4 tsp. baking soda Celery (opt.) Green pepper (opt.) 1. Place tomatoes (I use home canned), onions, bay leaf, allspice, parsley, pepper, sugar and salt in pan. Bring to a boil, simmer 15 minutes. 2. Put tomato mixture through sieve, take out bay leaf and allspice. Soup will be chunkier if you only take out the spices. 3. Add soda to tomatoes. 4. Melt butter, blend in flour and cook until smooth. Stir in milk. Heat, then add to tomato mixture. Stir until smooth. Serve hot. |
