ARROZ CON POLLO 
1/4 c. oil
1 c. rice
2 c. chicken broth
1/2 tbsp. salt
1 sm. onion, chopped fine (may use instant onion powder)
Garlic powder
10 pieces chicken (shrimp can be used)
Saffron
Pimentos

Brown onion or onion powder and garlic powder in the hot oil. Add salt and chicken. Brown all together, pouring onion and garlic mixture over chicken while browning. Mash the saffron until it becomes a fine powder. Heat a little of the chicken broth until it boils. Pour this into the mashed saffron.

Add this to the 2 cups of chicken broth. Add the rice over the chicken and pour the broth with saffron into the chicken and rice. Stir it evenly. Simmer on top of the stove, covered, for 3/4 hour. When the liquid is absorbed, garnish the top with pimentos.
