CHEESECAKE BARS 
1/3 c. brown sugar
1 c. flour
1/2 c. walnuts, finely chopped
1/3 c. butter, melted
1 (8 oz.) cream cheese
1/4 c. sugar
1 egg
1 tbsp. lemon juice
2 tbsp. cream or milk
1 tsp. vanilla

In bowl mix brown sugar, flour and nuts. Stir in the butter, mix with hands until light and crumbly, measure out 1 cup of the mixture to be used later for topping. Place rest in an 8 inch square pan and press down firmly. Bake this at 350 degrees for 12 to 15 minutes.

Now beat cream cheese with the 1/4 cup sugar until smooth. Beat in the egg, lemon juice, cream and vanilla. Pour this into the baked crust. Top with the reserved crumbs. Return to oven and bake 20 to 25 minutes. Cool thoroughly and cut into 2 inch squares.

These can be baked the day before; cover with Saran Wrap and keep refrigerated. Yields 16 squares. I always double the batch.
