APPLESAUCE PANCAKES 
2 eggs
2 c. all-purpose flour
1 c. milk + 1 c. applesauce
1/4 c. vegetable oil
1/2 tsp. cinnamon
2 tbsp. baking powder
1 tsp. salt

Beat eggs with hand beater until fluffy; beat in remaining ingredients just until smooth.

Makes about 18 (4-inch pancakes).

Great basic recipe, very fluffy and tender. I increased the cinnamon and halved the salt, topped them with additional applesauce mixed with maple syrup and the family ate them up. I'm always looking for ways to use up applesauce from our trees and will definitely be using this one again.
