BROCCOLI CAULIFLOWER SALAD 
1 head broccoli
1 head cauliflower
1 med. onion
1/2 c. bacon bits
2 c. salad dressing
1/4 c. Parmesan cheese, grated

Chop broccoli and cauliflower into bite-size florets. Mince onion and add to broccoli mixture. Stir in bacon bits. Stir together salad dressing and Parmesan cheese and mix into salad. Chill and serve.

Makes 12 servings.

Hi Verlyn,

Steam the broccoli by using a mesh basket or colander over boiling water; cover and cook until the broccoli is a bright green (not an olive green). Drop into a pan of ice water to stop the cooking.

You can peel some of the outside of the bottom portion off by peeling/pulling strips upward. You don't need to do a complete job of peeling; removing some of the toughest outer stem is enough.

Hi Thomas,

Try a homemade vinaigrette made with extra virgin olive oil, red wine vinegar, a pinch each of fresh basil and oregano (or to taste) and some crushed fresh garlic. Let the garlic marinate in the vinegar alone for 10 minutes before adding the remaining ingredients to take off the "edge".

The dressing your talking about is usually 1 cup of mayo, 1/2 cup of sugar and 2 tablespoons of white vinegar. Just whisk together.
