MEXICALI CASSEROLE 
1 lb. ground beef
1 pkg. (1 1/2 oz.) taco seasoning mix
1 can (14 1/2 oz.) whole tomatoes, chopped and undrained
1 can (8 1/2 oz.) whole kernel corn, drained
1 egg
2/3 c. milk
1 pkg. Martha White Mexican Cornbread mix

Preheat oven to 400 degrees. Grease a shallow 2 quart baking dish. Brown ground beef in large skillet; drain. Return beef to skillet and add taco seasoning mix, tomatoes and corn. Bring mixture to a boil over medium heat, stirring occasionally. Pour mixture into prepared dish. Beat egg in small mixing bowl. Add milk and cornbread mix; stir until smooth. Pour cornbread batter over ground beef mixture. Bake for 25 to 30 minutes or until golden brown. Cool for 10 minutes before serving. Makes 4 to 6 servings.
