GAZPACHO RELISH 
2 tomatoes, chopped
1 cucumber, chopped
1 green pepper, chopped
1/2 c. red onion, chopped
1/4 c. olive oil
2 tbsp. vinegar
2 tsp. parsley, chopped
1 sm. clove garlic, minced
1/2 tsp. salt
1/8 tsp. pepper

In quart glass jar, alternate layers of vegetables. Combine oil, vinegar, parsley, garlic, salt and pepper. Pour over the vegetables. Screw lid on very tightly. Chill overnight, turning jar upside down during part of the chilling to marinate all. Serves 6.
