STIR-FRIED CHICKEN WITH
VEGETABLES
 
2 boneless chicken breasts
1 tbsp. sherry or scotch
1/2 tsp. salt
1 tbsp. cornstarch
Oil
4 oz. can button mushrooms
1/2 c. Chinese pea pods, strings removed
1 sm. bell pepper, cut in strips
3 hot red peppers, diced
2 stalks green onion, cut into 1/2 inch pieces
2 tsp. minced ginger root
2 c. broccoli floweretts
1/2 c. carrots sliced diagonally

SAUCE:

4 tbsp. water
1 tbsp. sherry
2 tsp. cornstarch
1 tsp. salt
1 tsp. sugar

Combine all ingredients and mix well.
