FRIED SHRIMP - BATTER 
5 lbs. lg. shrimp
1 c. plain flour
1/8 tsp. sugar
1 egg, beaten
1 c. ice water
2 tbsp.oil
Salt to taste
Cayenne pepper to taste

In a bowl mix flour, sugar, beaten egg, water, oil, salt and pepper. Beat batter well and refrigerate for about 30 minutes. Peel shrimp and split down back to form butterfly. Dip in batter and fry in small amount of oil - about 375 degrees. (Fry just a few shrimp at a time.)

I tried this method for fried shrimp and they came out delicious. mm mm mm so good my girl ate all of her's and half of mine... man I would definitely recommend this with some homemade tartar sauce and french fries.

Was great! Added a couple of dashes of cayenne, would probably start with 1/8 tsp. just for some flavor, also if you add 1/2 tsp. paprika it browns better. This is a keeper, light breading!!!
