BATTER - FRIED SHRIMP 
1 1/2 c. flour
1/2 c. cornstarch
1/2 c. white corn meal
1/2 tsp. baking powder
Shrimp, clean, devein & butterfly
Extra corn meal (to roll shrimp in)
1 tsp. salt
1 egg, beaten
1/2 c. milk
1 1/2 c. water

Mix flour, cornstarch, corn meal, salt and baking powder very well. Combine egg, milk and water; add to flour mixture, mixing quickly and beating with an egg beater until smooth. Dip shrimp into batter; then roll in white corn meal and fry at once.
