ZUCCHINI BREAD 
2 c. shredded raw zucchini (skin & all)
2 c. sugar
1 c. cooking oil
3 eggs
1 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. ginger
1/2 c. chopped walnuts

Grease and lightly flour two 5 x 9 inch loaf pans or 4 small loaf pans. In mixing bowl combine sugar, oil, eggs, vanilla and zucchini. Mix until well blended. Sift together flour, baking powder, baking soda, salt and spices. Add to zucchini mixture, beating until well blended. Stir in chopped nuts. Pour into loaf pans. Bake at 325 degrees for about 1 hour. This bread freezes well.
