ZUCCHINI BREAD | |
3 eggs 1 c. sugar 2 c. grated squash (with peel) 2 tsp. vanilla 1 tsp. baking soda 1/4 tsp. baking powder 1 c. oil 1/2 c. brown sugar 3 c. flour 1 tsp. salt 3 tsp. cinnamon 1/2 c. chopped nuts Beat eggs until light and foamy. Add oil, sugars, vanilla and grated squash. Mix lightly but well. Add remaining ingredients slowly (except nuts). Divide 1/2 of batter into 2 loaf pans. Add nuts to remaining batter and divide into loaf pans. Bake at 325 degrees for 1-1 1/2 hours. Cool on rack. |
