ZUCCHINI BREAD | |
3 eggs 2 c. sugar 3 c. flour 1 tsp. salt 1 tsp. cinnamon 1 tsp. baking soda 1 tsp. baking powder 1 c. coconut 1/2 c. chopped nuts 1 c. vegetable oil 3 c. raw grated zucchini squash 1 tsp. vanilla Grease 2 (9 1/2 x 5 1/4 x 2) loaf pans. Mix ingredients together as you would any cake or bread. Bake at 325 degrees for about 1 hour 15 minutes or until done. Makes 2 loaves. Can be used as a dessert. |
