CHERRY CHEESE TARTS 
3 8oz. bricks of cream cheese
1 1/2 cups sugar
4-5 eggs (depending on size)
1/2 teaspoon salt
1 teaspoon vanilla
1 box Nilla vanilla wafers
1 container foil baking cups
1 can cherry pie filling (or blueberries, raspberries, or apple filling)

Cream together cheese, sugar salt, vanilla and eggs; mix well but not until smooth. Fill foil cups with 1 vanilla wafer, then 3/4 full of cheese filling.

Bake at 350°F in preheated oven for 15 minutes (No Longer)! Remove from oven and cool. When cool, put fruit on top. Makes about 24 mini cheesecakes. Keep refrigerated.
