CHICKEN PARMESAN | |
2 1/2 - 3 lb. chicken, cut up 1 c. crushed pkg. herb-seasoned stuffing mix 1/2 c. butter, melted 2/3 c. grated Parmesan cheese Cut up one 2 1/2 - 3 pound ready-to-cook chicken. Dip pieces in 1/2 cup melted butter. Roll pieces in mixture of stuffing mix and cheese. Place pieces skin side up, not touching, in a greased, large shallow baking dish. Sprinkle with remaining crumbs. Bake at 375 degrees about 1 hour or until done. Do not turn. Makes 4 servings. Note: I have always used skinned and boneless chicken breast and instead of greasing my pan I put some water in with the chicken. Then I put foil over my pan and bake and I use the Italian style of Parmesan cheese. |
