CHICKEN PARMIGIANA 
1 chicken (3 lb.), cut into serving pieces
Salt to taste
Freshly ground pepper to taste
1/4 c. butter or olive oil
1 c. mushrooms, sliced
1 green pepper, cored, seeded and finely chopped
1/2 c. onion, finely chopped
1 garlic clove, finely minced
2 c. tomatoes, peeled, seeded and chopped
1/2 c. dry vermouth
1/2 c. stuffed olives, sliced
1/4 c. Parmesan cheese, grated

Sprinkle chicken with salt and pepper and brown on all sides in butter or oil in a heavy skillet. Sprinkle with the mushrooms and cook for 5 minutes. Add green pepper, onion, garlic, tomatoes and vermouth. Cover tightly and bake for 30 minutes at 350 degrees. Add olives and cook for 10 minutes longer. Serve with grated cheese. Serves 4.
