CHICKEN PARMIGIANA (MICROWAVE) 
1/4 c. water
1 egg
2 lbs. chicken parts
1 c. seasoned dry bread crumbs
1/2 c. grated Parmesan cheese
1/4 tsp. paprika
2 tbsp. oil
1 (8 oz.) can tomato sauce or
1 c. spaghetti sauce
Oregano
1 c. shredded Mozzarella cheese

Beat egg with water. Dip chicken in bread crumbs mixed with Parmesan cheese and paprika, then in egg and again in bread crumb mixture. Coat bottom of an 8-inch square dish with 1 tablespoon oil. Place chicken in dish; sprinkle with remaining oil.

Cook on HIGH 3-4 minutes; turn chicken over. Cook on HIGH 3-4 minutes. Top with tomato sauce and season with oregano. Cook on HIGH 12-14 minutes or until sauce is hot. Sprinkle with Mozzarella cheese and let stand, covered, 5 minutes, or until cheese melts. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This dish was easy to prepare but I think the variable would be the strength of the microwave. My chicken came out a bit chewy although good flavor. I'd suggest the author add the strength of her microwave so each cook could adjust based on theirs.
