CHICKEN-ZUCCHINI PARMIGIANA 
3 lg. cloves garlic, halved
2 tbsp. oil
2 chicken breasts, split, skinned & boned
3/4 tsp. salt, divided
3 med. zucchini, sliced thin
1/2 tsp. thyme
1/4 lb. Mozzarella cheese, sliced
1/2 c. prepared marinara sauce
Pepper

In large heavy skillet, saute garlic in oil until golden; discard garlic. Saute chicken in oil 8 minutes, or until lightly browned; sprinkle with 1/4 teaspoon salt and pepper. Remove from skillet. Add zucchini to skillet; sprinkle with 1/2 teaspoon salt and pepper. Cook and stir 5 minutes or until crisp tender. Push to sides of skillet. Arrange chicken in middle of skillet. Top chicken with cheese, then sauce. Cover; cook 3 minutes, or until cheese melts. Serves 4.
