CARROT BARS 
BARS:

4 eggs, beaten
2 c. sugar
1 c. oil
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 jars baby carrots

FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1 c. butter, softened
1/2 tsp. vanilla
4 c. powdered sugar

BARS: Mix eggs, sugar and oil together. Add flour, soda, cinnamon and salt and mix together. Stir in the baby carrots. Put in 2 greased 13 x 9 inch pans. Bake at 350 degrees for 25 to 30 minutes. When cool, frost.

FROSTING: Beat cream cheese and butter together. Add vanilla and powdered sugar. Whip thoroughly.
