BROCCOLI CHOWDER (Microwave) 
1 (10 oz.) pkg. frozen chopped broccoli
1 med. onion, finely chopped (1/2 c.)
1/2 c. water
1 (10 3/4 oz.) can cream of chicken soup (or mushroom or celery)
1 c. milk
1 c. shredded Cheddar cheese (4 oz.)
1/8 tsp. ground red pepper
1/4 c. peanuts, chopped (optional)

In 2 quart casserole, combine broccoli, onion and water. Cook covered on high 5-6 minutes or until vegetables are tender, breaking up broccoli and stirring twice. Do not drain. Stir in soup, milk, cheese and red pepper. Cook uncovered on high 7-9 minutes or until heated through, stirring twice. Top each serving with peanuts (optional). Makes 6 side dish servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
