PORK LOIN WITH SOUR CREAM GRAVY | |
1 3 to 4 lb. boneless pork loin 2 tbsp. lemon juice 1 1/2 tsp. salt 1/2 tsp. pepper Place roast, fat side up, on a rack in a shallow roasting pan. Brush with lemon juice, salt, and pepper. Bake uncovered for 1 hour and 20 minutes at 325°F. Let stand 10-15 minutes before slicing. Garlic can be inserted in roast in 1/2 inch slits at 1 inch intervals on top of roast (5 cloves of garlic). Sour Cream Gravy: 1 tsp. cornstarch 1 tbsp. water 2 tbsp. pan drippings 1 (8 oz.) container sour cream Combine water and cornstarch, gradually stir in pan drippings and sour cream. Cook over low heat until thickened and heated. (Place drippings in freezer to quickly solidify fat.) |
