SUNSHINE CABBAGE SALAD | |
Light and healthy, with no added oil, this make-ahead salad is great in the summer or winter. 2 c. shredded cabbage 1 c. cubed fresh pineapple 2 oranges, peeled, seeded, cubed 1 tsp. sugar 1 banana, sliced In large bowl, combine all ingredients except banana, including as much juice from fruit as possible; toss gently. Cover; refrigerate until chilled. Just before serving, fold in banana. Makes 8 (1/2-cup) servings. Tip: Partially drained canned pineapple chunks can be substituted for fresh pineapple. |
