SUNSHINE CARROT SALAD 
2 c. carrots, grated
1 (11 oz.) can Mandarin oranges, drained
1 c. pineapple chunks, drained
1 c. flaked coconut
1/2 c. raisins
1 (8 oz.) carton commercial sour cream

Combine all ingredients, except sour cream; stir well. Chill 2 to 3 hours. Stir in sour cream. Serve on lettuce leaves. Yields 6 to 8 servings.
