MCINTOSH APPLE CAKE
5 Mcintosh apples, peeled & sliced thin
1/2 c. sugar (for apples)
1 1/2 tsp. cinnamon
3 c. flour
1 3/4 c. sugar (for batter)
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
4 eggs
1 c. oil
1/2 c. orange juice
2 tsp. vanilla

Combine sliced apples, 1/2 cup sugar and cinnamon in a bowl; set aside.

In large bowl, sift flour, 1 3/4 cup sugar, baking soda, baking powder and salt.

In separate bowl, beat eggs, oil, orange juice and vanilla (until eggs are a little frothy). Add to flour mixture and blend on low speed for 1 minute. Then beat 4 minutes on high; drain apples.

Grease 10 inch tube pan. Pour approximately 1/3 batter in tube pan, then layer 1/2 apples, then 1/3 batter. Spread remaining apples, then remaining batter. Bake at 325 degrees for 1 1/2 hours (depending on oven, check at 1 hour).
