LEMON CHICKEN 
1 chicken, about 3 lbs., cut into serving pieces
4 tbsp. olive oil
2 tbsp. grated onion
1 lg. clove garlic, crushed
1/2 tsp. dried leaf thyme
1/2 tsp. dried marjoram
1/2 tsp. ground coriander
Peel of 1 lemon, grated
Juice of 1 lemon
1 tsp. paprika
Salt and pepper to taste
1 1/2 oz. butter
2 tbsp. minced fresh parsley

In a bowl, blend all ingredients except butter and parsley. Rub the mixture well into the chicken pieces and let marinate for 4 hours. Turn the pieces in the marinade a few times.

Preheat the oven to 350 degrees. Butter a baking dish; place chicken in 1 layer in the dish and dot with pats of butter. Bake in hot oven for about 1 hour or until chicken is tender. Baste a few times with remaining marinade. Sprinkle chicken with parsley when serving.
