CARROT CAKE 
1 c. molasses
1 c. butter or oil
4 eggs
1/2 can (20 oz.) crushed pineapple AND 1/2 cup juice from pineapple
1 c. all purpose flour
2 tsp. baking soda
1 tsp. cinnamon
2 c. shredded carrots
1/2 c. chopped walnuts
1 c. whole wheat flour

In a large bowl, combine molasses, oil, eggs, pineapple and pineapple juice. Add the all purpose flour, baking soda, cinnamon, carrots, and nuts. Stir together. Then mix in the whole wheat flour. The batter will be thin. Pour mixture into a 9x13 inch cake pan and bake at 350 degrees for 30 to 35 minutes. This is a delicious cake!
