CARROT CAKE 
1/2 c. carrots, 2 lg. carrots
1 1/4 c. dates, chopped up
1 c. raisins
1 2/3 c. water
1/4 c. unsweetened applesauce
1 tsp. ground cloves
1 tsp. nutmeg
2 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder

Mix all together and add 1/2 cup of nuts, chopped, if wanted. Put in loaf pan with Pam cooking spray. Bake, 350 degrees, for 45 to 50 minute until golden brown.
