ITALIAN RICOTTA COOKIES 
2 sticks butter, softened
2 eggs
1 lb. ricotta
2 c. sugar
2 tsp. vanilla extract
1 tsp. almond extract
1 tsp. baking powder
1 tsp. baking soda
4 c. flour

Beat eggs and butter; add ricotta, sugar and rest of ingredients. Take and roll into ball shapes and place on lightly greased cookie sheets. If dough is too sticky to shape, add a little flour.

Bake at 350 degrees for 10 to 15 minutes or until lightly browned. Let cool on wire rack.
