CARROT FRUIT CAKE | |
2 eggs 1/2 c. honey 3/4 c. oil 1/4 c. buttermilk 2 c. carrots, grated 1/2 c. chopped walnuts 1/2 c. chopped pecans 1/2 c. chopped almonds 1 1/4 c. wheat flour 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1/2 c. flaked coconut 1/2 c. crushed pineapple, drained 1/2 c. light raisins 1/2 c. reg. raisins Mix all together, pour into greased and floured 9 inch square pan. Bake at 300 degrees for 60-65 minutes. |
