SEAFOOD SAUCE 
1 c. diced green pepper
1 c. sliced mushrooms
1/2 c. diced onion
2 cloves garlic, minced
2 tbsp. reduced-calorie butter, melted
2 tbsp. all-purpose flour
1 c. evaporated skimmed milk
1 c. skim milk
3 tbsp. dry sherry
1 (8 oz.) pkg. frozen or fresh peeled, cooked shrimp, thawed
6 oz. crabmeat or scallops
1/4 c. grated Parmesan cheese
Hot pasta (cooked without fat or salt)

Saute first 4 ingredients in butter until vegetables are tender. Add flour; cook, stirring constantly, 1 minute. Gradually add evaporated skimmed milk and skim milk, stirring constantly until mixture is thickened and bubbly. Stir in sherry, shrimp, seafood mix, and Parmesan cheese.

Cook sauce until thoroughly heated. Serve over pasta. Yield: 8 servings (282 calories per 1/2 cup sauce with 1 cup pasta).
