ZUCCHINI CASSEROLE 
3 c. zucchini, cubed or sliced
Sm. onion, chopped
1 green pepper, chopped
1 stalk celery, chopped
1 tomato, diced

In a large skillet, saute all vegetables in butter. Drain vegetables. Set aside. Combine: 1 tsp. salt and pepper 2 beaten eggs 3 c. breads cubes

Add to vegetables and mix well. Place in a shallow baking dish and bake for 35- 45 minutes at 350 degrees. Makes 4 to 6 servings.

NOTE: May add 1 pound of ground beef (fry it with the onions). May also use additional zucchini and cheese.
