SQUASH AND TOMATO CASSEROLE 
2 med. zucchini, sliced
2 yellow summer squash, sliced
2 med. tomatoes, peeled & chopped
1 med. onion, diced
1/2 tsp. soy sauce (optional)
1/4 tsp. salt
1/2 tsp. sugar
1/4 tsp. garlic salt
1/4 tsp. pepper
1-1 1/2 c. shredded Cheddar cheese
2 tbsp. butter

Place zucchini and yellow squash in a 2 1/2 quart casserole. Sprinkle with half each of soy sauce, salt, garlic salt and pepper. Layer tomatoes and onion over squash; sprinkle with remaining seasonings. Top with cheese and butter. Cover and bake at 350 degrees for 40-45 minutes. Yields 6-8 servings.
