BROCCOLI CORNBREAD 
2 pkgs. Jiffy cornbread mix
4 eggs, well beaten
10 oz. pkg. frozen, chopped broccoli, thawed
12 oz. carton sour cream
1/2 c. chopped onion, optional
2 sticks butter

Melt butter in a 9 x 13 baking pan in a 375 degree oven. Mix remaining ingredients. Pour in the melted butter and stir to blend. (The butter greases the pan).

Pour mixture into pan and bake 45 minutes or until golden brown. Cut into 15 squares. Freeze well.

Chopped spinach or cut okra may be substituted for the broccoli. Grated cheese is optional, but good.
