EGG SALAD 
6 to 12 eggs, hard boiled, peeled and potato mashed
2 tbsp. real mayonnaise (Hellmann's or Best Foods)
1/4 cup shredded onion
1/4 cup shredded pickle
Beau Monde seasoning, to taste (Spice Islands)
pepper to taste

Mix all together. Let set for about an hour in the refrigerator.

I like to serve this as a sandwich on fresh bread.
