HAM AND POTATO CASSEROLE 
3 tbsp. butter
2 c. diced potatoes (can add more)
1/2 c. chopped onion
1 c. chopped, cooked ham (can add more)
6 eggs
1/8 tsp. pepper
2 tbsp. milk
1/2 to 1 c. grated cheese

Melt butter. Add potatoes and onion. Stir until coated. Cover and cook, stirring occasionally, 20 minutes or until potatoes are tender. Stir in ham and shut off burner.

Preheat oven to 350 degrees. In a small bowl, beat eggs with pepper and milk. In a casserole dish, add everything and stir together. Coat ingredients well. Bake 15 to 20 minutes or until eggs are set. Sprinkle cheese on top and bake about 5 more minutes.
