VEGETARIAN LASAGNA OF COST PLUS 
1 box lasagna noodles
2 (15 1/2 oz.) spaghetti sauce
1 lb. ricotta cheese
2 c. shredded Mozzarella cheese
1 pkg. chopped spinach, thawed & drained well
1/2 lb. mushrooms, sliced & sauteed briefly
1 tsp. salt
3/4 tsp. oregano
1/8 tsp. pepper

Preheat oven to 350 degrees. Grease 9 x 12 inch pan. Combine ricotta, 1 1/2 cups Mozzarella, salt, pepper, oregano. Layer sauce, noodles, cheese mixture, spinach, mushrooms. Repeat until used. Top with 1/2 cup Mozzarella cheese. Pour 1 cup water around edges. Cover with foil. Bake 1 hour and 15 minutes at 350 degrees. Let stand 15 minutes and serve. May be prepared in advance but add water before baking.
