VEGETARIAN LASAGNA 
1 pkg. frozen spinach, thawed & squeeze water out
1 (15 oz.) cottage cheese
1 c. Parmesan cheese
1 egg
30 oz. spaghetti sauce
Lasagna noodles
16 oz. mozzarella cheese
1/2 c. water
Add salt, pepper, mushroom & onion to taste

Mix spinach, cottage cheese, egg, salt, pepper and 1/2 cup Parmesan cheese (onion and mushrooms). Spread 1/2 of spaghetti sauce into greased 12 x 8 x 2 inch pan. Arrange 4 noodles lengthwise and one widthwise. Put 1/2 spinach mixture over noodles and spread thinly.

Sprinkle with 1/2 mozzarella. Spread 1 1/2 cups of sauce. Repeat. End with sauce and sprinkle with remaining Parmesan cheese. Run knife around edge. Spoon water in. Tightly cover with foil and bake at 350 degrees for 1 1/2 hours.
