CHICKEN FRIED RICE 
2 chicken breasts
1 chopped onion
1 chopped bell pepper
Garlic to taste
Soy sauce
1 c. chopped celery
2 c. cooked rice
1 can mushroom pieces

Cut chicken into bite sized pieces and saute in vegetable oil and garlic. Add soy sauce to taste, after chicken has been cooking 5 minutes. When chicken begins to get tender (10 to 15 minutes) add onion, bell pepper, celery and mushrooms. Saute 8 minutes. Add rice and cook together 10 minutes. Add more soy sauce while rice and chicken mixture is cooking!
