MINIATURE PUMPKIN LOAVES 
4 eggs
3 1/2 c. flour
3 c. sugar
1 c. oil
1/2 c. water
2 tsp. baking soda
1/2 tsp. cinnamon
1 1/2 tsp. salt
1/2 tsp. nutmeg
2 c. pumpkin
1/2 c. nuts (opt.)
1/2 c. raisins (opt.)

Grease 8 (#2) cans. Cream together eggs, sugar, oil, water and pumpkin. Sift together flour, soda, spices and salt. Mix in with wet ingredients. Fold in raisins and nuts. Fill cans a little over half full. Bake at 350 degrees for 1 hour. Cool 10 minutes before removing from cans.
