LEAF LETTUCE AND MANDARIN SALAD 
SALAD:

1 bunch leaf lettuce, red or green, washed and torn
1 c. thin sliced celery
1 tbsp. fresh minced parsley
2 green onions, sliced
1 (11 oz.) can mandarin oranges, drained
1/4 c. toasted slivered almonds (garnish)

DRESSING:

1/4 tsp. salt
1/8 tsp. Tabasco sauce
1 tbsp. sugar
1 tbsp. tarragon vinegar
1/8 c. olive oil
Pepper to taste

Combine lettuce, celery, parsley, oranges and green onions in a salad bowl. Toast the almonds for garnish.

Combine dressing ingredients, mixing well. Toss with salad. Top with almonds.

Variations: You can add strips of grilled chicken breast to make it more of a main dish.
