LETTUCE/MANDARIN SALAD 
SALAD:

1 sm. head red leaf lettuce
1 tbsp. parsley
2 green onions, sliced
1 can mandarin oranges, drained
1/4 c. caramelized almonds

DRESSING:

1/4 c. oil
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. sugar
2 tbsp. vinegar
A few dashes Tabasco

CARAMELIZED ALMONDS:

2 tbsp. sugar
1/4 c. slivered almonds

Combine dressing ingredients ahead of time and refrigerate.

To caramelize almonds: Put 2 tablespoons sugar in heavy skillet. Add almonds. Stir constantly over low heat until sugar melts, turns brown and collects on almonds. Remove from heat and break apart to cool. USE A WOODEN SPOON--others melt!

Toss all salad ingredients and caramelized almonds with dressing.
