ARTICHOKE DIP 
2 (approximately 8 oz.) cans artichokes (not marinated)
2 c. mayonnaise
8 oz. grated Parmesan cheese, fresh or canned
Ritz crackers

Drain and mince artichokes. Mix all ingredients together and pour into casserole dish. Top with Ritz crackers. Bake at 350 degrees for 30-35 minutes.
