CHOCOLATE MINT SQUARES 
COOKIE LAYER:

2 squares (1 oz. ea.) unsweetened chocolate
1/2 c. butter
2 eggs
1 c. sugar
1/2 c. chopped almonds
1/2 c. flour

1. Melt chocolate and butter over hot water.

2. In bowl, beat together eggs and sugar until thick. Add nuts, flour and chocolate-butter mixture; stir until smooth.

3. Pour batter in buttered 9" square pan and bake in preheated 350 degree oven for 30 minutes or until done. Let cool.

MINT FILLING:

1 1/2 c. powdered sugar
3 tbsp. butter, softened
2 tbsp. whipping cream
3/4 tsp. peppermint flavoring

1. Beat together all the ingredients until smooth. Add a drop of green food coloring and/or 2 tablespoons crushed peppermint candy, if desired.

2. Spread over cookie layer; cover and chill until firm, about 1 hour.

CHOCOLATE GLAZE:

4 squares (1 oz. ea.) semi-sweet chocolate
4 tbsp. butter
1 tsp. vanilla

1. Melt together all ingredients over hot water. Drizzle over mint topping. Cover and chill again until firm.

2. Cut into bite size squares to serve.
