COCONUT CRUNCH APPLE PIE 
1 1/2 c. flour
1/2 tsp. salt
1/2 c. shortening
5 to 6 tbsp. cold water
1/4 c. shredded coconut

Mix together flour and salt. Cut in shortening until the size of small peas. Mix in water by tablespoons until soft dough is formed. Roll out dough on floured board. Sprinkle with coconut and roll in. Place crust into 9 inch pie pan. Flute edges or press with fork tines.

FILLING:

4 c. peeled and sliced apples
1/2 c. sugar
1/2 tsp. cinnamon
2 tbsp. flour

Mix filling ingredients and turn into crust.

TOPPING:

1/2 c. flour
1/4 c. brown sugar, packed
1/2 tsp. cinnamon
1/4 c. butter, softened
1/2 c. shredded coconut
1/2 c. chopped walnuts

Mix flour, brown sugar and cinnamon. Mix in butter, then coconut and walnuts. Sprinkle evenly over pie. Bake pie at 400 degrees for 40 to 45 minutes. Allow to cool before cutting.
