CHINESE BEEF CASSEROLE 
1 lb. ground beef
2 tbsp. shortening
2 med. onions, chopped
1 c. diced celery
1 can cream of chicken soup
1 can cream of mushroom soup
1 1/2 c. warm water
1/2 c. uncooked rice
1/4 c. soy sauce
1/4 tsp. pepper
1 can Chinese noodles
Salt to taste

Brown beef and onions in shortening. Add celery and soups, rinse out cans with warm water. Add rice and soy sauce. Put in 2-quart greased casserole and bake 30 minutes at 375 degrees with cover on. Remove lid and bake 30 minutes longer. Cover top with Chinese noodles and bake 15 more minutes. Serves 8 generously. Great for potluck.
