OATMEAL COOKIES 
1 c. (less 2 tbsp.) melted shortening
2 c. brown sugar
2 eggs
4 c. quick-cooking oatmeal
2 c. plain flour
1 tsp. baking soda
1/4 tsp. salt
Vanilla extract (to taste)
1 c. broken pecans

Mix together sugar, melted shortening, and eggs. Beat well. Mix flour and oatmeal in separate bowl with salt and soda. Add to first mixture well, mixing in 1 cup pecan pieces and vanilla.

Drop on cookie sheet. Bake in 400 degree oven for 12-15 minutes. Decorate top of cookie with whole pecan or cherry on top, if desired, before baking.
