BLUEBERRY UPSIDE DOWN CAKE 
2 c. blueberries
1/4 c. shortening
1 c. flour
1/2 tsp. salt
1/2 c. sugar, divided
1 egg
1 1/4 tbsp. baking powder
1/2 c. milk

Pour washed berries into a buttered 1 1/2 quart casserole. Sprinkle with half the sugar. Cream shortening, the rest of the sugar and egg together. Sift flour, baking powder and salt together. Add to egg mixture alternately with milk. Bake at 375 degrees for 45 minutes. Serve warm with whipped cream or ice cream.
