CHINESE CHICKEN SALAD 
1 head lettuce
4 scallions
1/3 bunch cilantro
1 to 2 carrots, shredded
1 c. peanuts, chopped
4 boned, skinned chicken breasts
1/2 pkg. Chinese rice stick noodles
Cooking oil
Sesame seeds

DRESSING:

Sesame oil
Vinegar
Hot Chinese mustard
Five spice powder
Hoisin sauce

Wash and coarsely chop the lettuce, scallions and cilantro. Set aside. Place the oil in a wok. Fry the rice stick noodles in small quantities until they puff up. Drain and set aside. Slice the chicken and coat with cornstarch. Fry the chicken. In a small bowl, combine the ingredients for the dressing. To assemble, combine the vegetables, the cooked chicken and the fried rice stick noodles. Add the dressing last. Coat to taste. Toss with sesame seeds.
