CHINESE CHICKEN SALAD 
1 lb. chicken (4 breasts), cooked and shredded
4 oz. maifun, cooked in hot oil
2 head lettuce, shredded
8 stalks scallions, chopped
4 tbsp. sliced almonds
4 tbsp. toasted sesame seeds
1 can mandarin oranges

DRESSING:

4 tbsp. sugar
2 tsp. salt (optional)
1 tsp. pepper
2 tbsp. sesame oil
6 tbsp. rice vinegar

Prepare dressing and refrigerate. Combine ingredients and toss with dressing just before serving.
